Taste:

As it ripens, the flavour sweet and delicate when it is ‘young’, becomes richer and more flavoursome, with hints of dried fruit, while its texture becomes slightly more crumbly and soluble.

At least 70 days.

semi-fat, semi-hard and semi-cooked.

Between 7 and 12 Kg.

Cylindrical in shape with a straight side, a flat top and bottom, a diameter from 30 to 45 centimetres.
