This cheese is produced in Valle Brembana , traditionally called herdsmen’s valley. Once, herdsmen were called “bergamì” and “bergamina” was the herd. Still nowadays “bergamino” is the term which refers to entrepreneur or worker who cares about dairy cows. Link with production land is characteristic. Typical processing and storage of dairy products occurs in pastures, in chalets called “casére”.
