Characteristics
Name:
Bitto D.O.P.
Milk:
Cow/unpasteurised – goats’ milk may be added to freshly milked full-fat cows’ milk, in a proportion of not more than 10%.
Paste:
The texture is compact and occasional there are typical ‘partridge-eye’ holes. The colour may vary from white to straw-coloured yellow.
Taste:
Sweet, delicate taste, reminiscent of hazelnuts and dried fruit. As it matures the taste becomes more intense and the texture drier.
Ageing:
At least 70 days.
Type:
Semi-hard-cooked.
Weight:
From 8 to 25 Kg.
Shape and dimension:
It has a characteristic cylindrical form with a sharp-edged concave side; its diameter varies from 30 to 50 centimetres.
Production:
Bitto is produced exclusively on the mountain pasture in summer between 1 June and 30 September.
